This week’s video is specific to Week 8: Eat Your Vegetables. Optimally, you want to get in four to six servings of vegetables into your diet each day. In this episode, I discuss my favorite way to get in a healthy dose of three servings of vegetables in one sitting: a veggie smoothie. In short, you can put almost any vegetable into a veggie smoothie, and you can even add fruit if you want to ease the “bitterness” you might find with an all veggie smoothie. What I love about this approach is that you not only get tons of vitamins and minerals, but you also get a ton of fiber. Here is a recipe for a Kale Smoothie. If you find Kale to be a bit too bitter, substitute with spinach.
