Hummus and Avocado Sandwich

Eating small snacks between meals can be a healthy way to keep your metabolism revved and hunger pains at bay. I have completely fallen in love with this sandwich as my afternoon snack. It is extremely healthy and delicious. It is vegan / vegetarian, good for those with gluten sensitivities, well-balanced, and completely satisfying.

The hummus provides protein, fiber and monounsaturated fats. The Ezekiel Bread is delicious and nutty flavored and is great for those who might be gluten sensitive. The avocado is smooth and tasty, providing a lot of wonderful nutrients as well. As a snack, I usually make this a half-sandwich, which is just filling enough to tie me over until dinner. If you want to enjoy it as a lunch or dinner, have the whole sandwich and a cup of soup and you’ll feel utterly satisfied.

Ingredients

  • 2 slice Ezekiel Bread
  • 1/4 cup hummus
  • 1/8 ripe avocado sliced thin
  • 3 slices red onion (thinly sliced)
  • 1/4 cup spinach

Directions

Toast the Ezekiel bread. Spread hummus onto both slices of bread. Layer one side with the onion and avocado slices. Layer the other with the spinach. Cut in half and enjoy!

      This is a really healthy sandwich. Although seemingly high in fat, it is all good fat which means you are getting great heart health out of this! PLUS the fiber is tremendous.
