If you know anything about Roni Noone (founder of  SkinnyMinnyMedia and blogger extraordinaire), you know that she is a smart lady, with lots of great ideas…who puts her money where her mouth is. In her quest to lose weight, Roni found a passion in blogging and developing recipes that helped her stay healthy. GreenLiteBites: Favorites From the First 3 Years (Volume 1) is just one of her many endeavors. It’s no surprise that she turned out a beautiful product. Green Lite Bites showcases all of her favorite recipes over the last three years…all intended to be healthy and easy to make.

Her recipes limit sugar and processed ingredients, and emphasize fruits and vegetables as much as possible. Sound plans for healthy meals!

The book is filled with 50 creative recipes, including everything from healthy breakfast ideas to side dishes to sweets…again…all healthy. The photography in the book is all by Roni Noone herself, and the layout is colorful and vibrant.

Here is a great recipe for summer barbecue:

Roni Noone - Southwest Turkey BurgersSouthwest Turkey Burgers

  • 8oz extra Lean Ground Turkey
  • 1/3 of a red bell pepper diced small
  • 1/3 of a green bell pepper diced small
  • 1/3 of a yellow bell pepper diced small
  • ½ of a small onion diced small
  • 1 medium button mushroom diced small
  • 1 egg white
  • ¼ cup quick oats
  • 1 tsp chili powder
  • ¼ tsp red pepper flakes (or to taste)
  • ½ tsp cumin
  • 1 tsp dried cilantro
  • Salt & pepper

Directions:

Put all ingredients in a bowl and combine with hands. Form the mixture into 4 equal sized patties approximately 4 ounces each. Grill about 4-5 minutes a side or about 6 minutes on the George Forman Grill. Serve on its own or on a whole wheat roll or English muffin.
